Will the server automatically redirect the client to a relay server without the server being in a playlist?

If the target DNAS is full and the DNASs are clustered, yes.

The DNAS will log something like the following:
<TIME> [dest: CLIENT IP] service full, redirecting to backup RELAYIP:RELAYPORT
