I've been trying to access one of the ess servers for days now (not hammering, just checking in at intervals) and I've had no luck. Will I ever be able to access the server, or is it a one in a million sort of thing? I'd love to watch TNG 24/7. ;)

when it says "server full", it means exactly that. the server is full. each server can only hold so many listeners/viewers and apprently the one you tried is reached its maximum capacity. there is nothing you can do other than to keep trying until someone else leaves.

The ESS streams are also using reserved slots for paying members. And it seems they have a lot of members so their servers seem to always be full. The quality isn't that great either as it still uses VP3/MP3 (last I was able to get in one) unless you get into their high quality "Lost" or "24" stream. The reserved slots also mean that even if you do get in, you're lucky to be able to stay for long as the reserved members have priority over you.
