I can't find the Balance and Volume knobs/buttons to change 'em! Am I just going blind from the 16 hour sessions in front of the screen or what!?

They are located on the following bitmaps.

volume.bmp balance.bmp

The two buttons pressed and not pressed are located at the bottom left of the bitmap.

Here is what it looks like in the base skin bitmap.

Course the full bitmap also contains more bars as well, but that at least should show you the position of the buttons, the location on balance.bmp is also similar, bottom left corner.
