I'd also try adding some different names in there too. If you have the toaster plugin, you will see that it might be better to use *folder.jpg and *cover.jpg as well

How about stopping the iTunesHandler.exe from loading at start up, this is the "real" problem. Disable this program from running, and iTunes will be none the wiser that you have connected your iPod....
