Well, difficult question, because there are so many genres.

I will therefore try to split this list on genres:

Best War/Action Movie
a. active action: The Seven Samurai
b. passive, BUT on a higher intellectual level:
Kurosawa's Ran

Sci-Fi
a. with special effects: 2001, A Space Odyssey
b. on an intellectual level: Solyaris
followed closely by Stalker

Comedy
Monty Python's Life of Brian and The Holy Grail
This is the quintessence of comedy and I find them both unsurpassed.

Common Movies
Metropolis (1927) (some Sci-Fi elements, too, but not really a Sci-Fi movie; still to see a Hollywood movie come close to it)
