It is getting to be that time of year again… where has the time gone?
I do find it positively repulsive that this year I saw christmas decorations appear well before halloween. Remember when they used to wait until after thanksgiving? Soon they will be starting up again right after NYE.
Speaking of thanksgiving… I need to figure out what I am going to make this year. My wife and I have always been a little non-traditional when we are left by ourselves. Last year I pulled out a tea smoked duck. It was very good… might have to repeat that this year.
Then comes christmas and christmas eve (though not in that order). Last year I think I made beef wellington and achiote marinated cornish hens stuffed with chorizo stuffing. We had massive nom, nom, noms…
The wellington came from Gordon Ramsay's The F Word; I stole the cornish hens recipe from someone on the food network. I think the hens came from a show of what chefs did for christmas eve. The chef that came up with thee recipe was shocked it came out as well as it did … especially considering it requires all of about a half hour of prep work.
