There are some voice removal plug-ins here on winamp (to a search for "voice") I haven't had a chance to try 'em yet though...

I would suggest DeFX. I think the others work by simply removing what's common to both the left and right channels. But DeFX adds the option of doing that only for sounds within the normal frequency range of vocals. That way, you can preserve centered instruments that are beyond the typical vocal range. As the version history puts it:

They target now on XMMS though (the unix counterpart of winamp)
Not sure if it still works with winamp, but it's worth a try.
