OS: CENTOS
Host: Mediatemple (Plesk)
CMS: Wordpress

I would like to get shoutcast working on our server, I cannot afford to spend too much time

Do you have a dedicated server? Its quite simple to set up if so. I don't believe (though I could be wrong) you can set it up via web server or anything non dedicated. I've done it both on linux and windows 2003/2008 server editions.

I have a virtual dedicated server. I will try it out but I just want to get it running today

You should be able to do it with a VPS as long as you don't have too many listeners and don't try to jack the quality too high. Depending on specs of course.
