Shoutcast Log Files

I am trying to set up my log files to where there is only one. I'm going to set up a scheduled task to email the log file from the shoutcast server (windows) to my email address once a month. Unfortunately, the way it is set up now I get about 5 log files that get made roughly once or twice a day and it deletes the old ones.. any advice on how to configure this so that I get one running log file or have better ideas on how to handle this?
