It could be that the other settings related to the encoder. Both the AAC and mp3 encoders do rather strange things if you give them invalid combinations of samplerate, channels and bitrate. I no longer have access to the documentation that lists the valid combinations, but common sense is a useful guide here.

For example, 8Khz, mono at 128kb would be pretty bizarre and would most likely give you an odd sounding result. I also seem to recall AAC going berserk if you ask it to do anything other than stereo at high bitrates.

Try changing the # of channels and the sample rate and see if that helps. For high bitrates you're generally going to want to use 44100hz stereo.
