generic frosted mini-wheats (with milk of course) Lunch - Dakota Summer Sausage (usually eaten raw like trail bologna) pan fried and placed on a toasted bun with pepper jack cheese sliced/deep fried potato slices (poor man's fries) with Cabellas "Big Hunt Rub" spice on them (that stuff is usually for covering meat from hunting, but works surprisingly well on fries) "Tampico" (a generic Sunny Delight orange drink that tastes a little better) Dinner - Renee's sweet & sour chicken, vegetables, and rice, water Midnight Snack (more like 2:15 a.m. snack)- generic rainbow sherbet I love being off for the summer. i've begun considering a padlock for the downstairs freezer, quite often lately i'll buy a box of the dibs ice cream and toss it in the freezer, only to open it and find 10 or so of the advertised 60 (i'm guessing) left ![]() i think for lunch or dinner i might be troubled to do some hamburgers given we had the nessecary cheese and onions, i've taken to slicing the onions and frying them in a seperate smaller pan untill they're nice and almost mushy, but not quite, very good. I hate everyone, so you don't have to. |

![]() I personally tried something a little different this evening, and it was DELICIOUS!!! I had some absolutely scrumptious Nutria, and I followed this Louisiana Nutria Recipe when preparing it. In case you are not familiar with it and are wondering exactly what Nutria is, I'll just quote a bit here... NutriaThis is a photo of a Nutria in a Louisiana marsh... ![]() It may not look too palatable above, but (as indicated in the recipe I linked to), when you saddle 2 hind portions of its meat and when seasoned properly, and with the addition of the wine and water in the crock pot.... Oh... I forgot to mention something.
The reason it takes so long to cook (6 hours - much longer than a turkey), is because Nutria is the size of a small dog. Mine was about the size of a cocker spaniel. It's a fairly BIG rodent!!! Yep - I started cooking it today at around 1:00pm and I wasn't able to eat dinner until after 7:00pm. But the wait was WORTH it!!! ![]() ![]() ![]() |

Let's reverse things for a second.
Anyone have a recipe for actual authentic jambalaya? Yes, I could try southern cooking or any one of the other food network sites and search for something. I would probably find what someone from the north believe how people in the south (specifically Louisaina) ought to make the dish all the while pretending to be someone from the south in an attempt to add authenticity to their recipe. |

You start with some extra lean ground beef, all ripped up and spread out on a pan.
Then dice some green bell pepper and some Swiss cheese to tiny cubes. After that combine it all in the pan, ensuring a good distribution, then pack into a burger patty. Pan fry (almost but below medium heat) both sides until cooked to your liking. My batter is a mess but pretty common.
3 bowls (not pot bowls...) in a row then the deep fryer at the end. Bowl one = milk. Bowl two = beaten egg. Bowl three = flour or seasoned Italian bread crumbs. Dip whatever you're going to deep fry in each of these, being sure to cover fully when in the flour, then drop in the deep fryer. Yes, it's a mess, but it's decent tasting. You could also pour the milk in with the eggs and beat it all together if you want. There are likely better solutions for the batter question, but this is all I have other than the cornstarch ideas. ^TOXIC HELL!!! I'm not sure I know how I survived my visits to that place (/those places), but somehow I seem to be hungry for more...
On the topic of the batter - in each bowl you only need enough to coat whatever you're dipping. Generally speaking it's rare that I need more than a half-inch of milk to dip the item in - just spin it around enough so that it all gets wet. Same with the bowl with the beaten egg - one egg is enough to coat a lot of wings or whatever you're dipping. Same again with flour - the milk and egg will act like a weak glue to help hold the flour to whatever you're dipping into. Use only what's needed to coat, if you run out, put a little more in.
