    Last night I had a delicious dinner made up of a few of my favorite things. I started out with a big plate of grilled asparagus topped with some freshly minced garlic and a drizzle of olive oil. Then, as a main dish I had pan seared salmon filets with a light lemon butter sauce. I served the salmon with a side of roasted Brussels sprouts tossed in garlic and butter. For my carb I had a big, fluffy sweet potato roasted until it was nice and crispy on the outside. As a finishing touch I added a small side salad with a light vinaigrette dressing. All in all, it was a flavorful and healthy meal that I enjoyed every last bite of.

    I had corn porridge for dinner, cooked in a slow cooker for 20 minutes and roasted pork ribs yesterday with onions and garlic. Plus sauerkraut. Tea with lemon.
